The Camino de Santiago pilgrimage route has been a favourite of mine since I finished it (so much I am planning a second one) - a mix of culture, history, and endurance travel that shaped my solo adventures and though me more than I thought possible.
Truthfully I could never choose just one - however I am hoping to cross off Central America this year!

You should definitely consider Mexico! Whilst I have never been (but really want) people speak highly of it and it can be easily done on a budget!
